Back then I reached for the yellow bottle of store-bought syrup, only to learn later it contained little to no real strawberry. I set out to make true homemade strawberry milk, loaded with real strawberry flavor, and the result was surprising: fresh, balanced, and far better than the artificial syrup. Even someone who claims not to like strawberry milk now asks for a glass.

Sugar – Standard white granulated sugar balances and preserves the bright strawberry flavor.

Water – A small amount of water is used to make the syrup; tap, filtered, or bottled all work.

Milk – Any milk or milk alternative is fine. Whole milk gives the creamiest result, while plant milks work well for dairy-free versions.
How To Make

Combine the strawberries, sugar, and water in a saucepan. Bring to a boil, then reduce the heat and simmer gently for about 10 minutes to concentrate the flavor.

Let the mixture cool for 10–15 minutes, then transfer it to a blender and puree until smooth. If you prefer a smoother syrup, strain the puree through a fine mesh sieve into a clean jar.

Chill the strawberry purée in the refrigerator until cold, about 30–60 minutes. To make a glass of strawberry milk, pour cold milk into a glass and stir in 3–4 tablespoons of the purée per 8 oz (adjust to taste).
Tips

Add a split vanilla bean or a splash of vanilla extract to the strawberries while simmering for a deeper flavor.

If strawberries are very sweet, reduce the sugar slightly. For tarter berries, keep the sugar amount or add a squeeze of lemon to brighten the flavor.

Store leftover purée in a sealed jar in the refrigerator for up to 5 days, or freeze portions for longer storage.
