I know some people like to take it down right away to mark the end of the holidays and the start of the new year, but I prefer to leave it up a little longer to hold onto that holiday cheer and the smell of pine.

Dan’s grandma told me it’s customary to keep a tree up until at least mid-January — and who am I to argue with my elders?

While I’m holding on to the tree, I’m also shaking up breakfasts with these Creamy Stovetop Cauliflower Oats.

Oats have always been a go-to for quick, filling breakfasts, especially on busy mornings after the gym. When I discovered you can add about 1/2 cup of vegetables without changing the flavor, I had to share it.

You might have tried zucchini “zoats” — well, say hello to “coats”: cauliflower oats. They’re creamy, nourishing, naturally sweet, and super simple to make.

Cauliflower is fast becoming one of my favorite vegetables because its mild flavor works in almost anything. Steamed riced cauliflower adds a fluffy texture to oatmeal without a pronounced veggie taste, plus it contributes fiber and vitamin C to keep you energized until lunch.

Creamy Stovetop Cauliflower Oats

Description

Easy stovetop creamy cauliflower oats with hidden cauliflower — a quick, nourishing breakfast that’s ready in about 10 minutes.


Ingredients

  • 1/2 cup gluten-free old-fashioned rolled oats
  • 1 cup unsweetened coconut or almond milk
  • 1 tbsp white chia seeds
  • 1/2 cup steamed riced cauliflower
  • 1/2 mashed banana or 1–2 tsp maple syrup (optional)
  • dash of cinnamon

Toppings

  • spoonful of almond butter
  • fresh berries
  • caramelized bananas
  • extra chia seeds

Instructions

  1. Prepare riced cauliflower in advance and store it in the fridge until ready to use.
  2. Add milk, oats, chia seeds, steamed riced cauliflower, and optional sweetener (mashed banana or maple syrup) to a saucepan over medium heat. Cook for 10–12 minutes, stirring frequently, until the oats absorb the liquid. Add more milk to loosen the texture if needed.
  3. Serve the creamy cauliflower oats in a bowl and top as desired. Suggestions: almond butter, blueberries, caramelized banana, and extra chia seeds.
  4. Drizzle with maple syrup if you like it sweeter.

Notes

To make caramelized banana rounds, slice a banana into rounds and cook in a skillet with a small drizzle of maple syrup for 8–10 minutes, flipping once halfway through.
