This Cheesy Loaded Cauliflower Bread is a low-carb side that’s full of flavor and a delicious way to enjoy more vegetables. It’s not a traditional bread texture, but it bakes into a flatbread-like base that satisfies cravings for something cheesy and savory while keeping carbs down. If you like cauliflower, you’ll appreciate this recipe — it’s simple to make and very versatile.

The mixture transforms in the oven into a crisp-edged, tender base that works great for sandwiches, appetizers, or light meals. It’s especially promising as a pizza crust—try topping it with your favorite pizza ingredients. Ham pairs especially well with cauliflower, so a ham-and-cheese pizza on this crust would be a delicious option.
My nephew made this and loved it. The dough is very easy to press and shape, then bake, making it a practical choice for busy weeknights or casual gatherings.

After prebaking, load the cauliflower base with toppings like cheese, chives, bacon or sliced ham. It’s an excellent substitute for traditional bread if you want to reduce carbs or avoid gluten—just check other ingredients (for example, some bacon brands may contain additives) to keep it fully gluten-free.

This satisfied that cheesy garlic-bread craving for me—while it’s not exactly the same as garlic bread, it’s a tasty, healthier alternative when you want something cheesy and garlicky without the carbs.

Are you excited about cauliflower as a substitute for bread, rice, or as a base for sauces? It’s a flexible ingredient that adapts well to many preparations, from crusts to rice-style sides and blended sauces.
Happy low-carbing!
