What is a brigadeiro

A brigadeiro is a small, round Brazilian confection with a texture similar to sticky fudge. Traditionally made with cocoa, sweetened condensed milk, and butter, the candy is cooked until it thickens, chilled, and rolled into bite-sized balls. While chocolate is the classic flavor, brigadeiros are extremely versatile — you can transform them with fruit powders, nuts, spices, or even liqueurs.

Brigadeiros originated in Brazil during the 1940s when sweetened condensed milk became a common household ingredient. The simple, shelf-stable nature of the condensed milk made brigadeiros an accessible and popular sweet, and today they’re a beloved treat across Brazil and beyond.

Brazilian Brigadeiro basics

A classic chocolate brigadeiro is typically made from three main ingredients:

  • 1 (14 oz) can sweetened condensed milk
  • 1 tablespoon unsalted butter
  • ~¼ cup cocoa powder (for chocolate versions)

For a brigadeiro, the key is cooking the condensed milk and fat until the sugar begins to caramelize and the mixture pulls cleanly away from the bottom of the pan. After cooling, the mixture is shaped into small balls and rolled in a coating such as sprinkles, cocoa, coconut, or powdered freeze-dried fruit.

Raspberry Brigadeiro version

This raspberry version substitutes pulverized freeze-dried raspberries for cocoa powder, giving the brigadeiros a vivid fruit flavor and a pretty pink hue (food coloring is optional). The result is a tender, slightly chewy candy packed with real raspberry taste.

  • Equipment: coffee grinder, blender, or food processor to turn freeze-dried raspberries into powder; fine mesh sieve (optional) to remove seeds; tablespoon measure and miniature cupcake liners for portioning; a shallow greased plate or bowl for cooling.
  • Ingredients: one 14 oz can sweetened condensed milk, 1 tablespoon unsalted butter, about ¼ cup freeze-dried raspberries pulverized into powder. Making the Raspberry Brigadeiros

Start by pulverizing the freeze-dried raspberries in a coffee grinder, blender, or food processor. If you prefer a completely smooth texture, sift the powder through a fine mesh sieve to remove seeds.

Combine the sweetened condensed milk, butter, and raspberry powder in a medium saucepan over medium heat. Stir constantly until the mixture reaches a boil, then lower the heat to medium-low. Continue stirring for about five minutes or until the mixture thickens considerably and pulls away from the bottom of the pan in one mass when you tilt it.

If you’d like a brighter pink color, add a few drops of red or pink food coloring during the cooking stage. Pour the hot mixture onto a greased plate or into a shallow bowl and refrigerate for about one hour to firm up.

Once chilled, lightly oil your hands and a tablespoon measure. Scoop roughly tablespoon-sized portions and roll them between your palms until smooth. Roll each ball in your chosen coating — extra raspberry powder, sprinkles, shredded coconut, or chopped nuts — and place them into miniature cupcake liners for a pretty presentation. The freeze-dried raspberry powder makes a particularly intense and complementary coating.

Should brigadeiros be refrigerated?

Brigadeiros can sit at room temperature for 2–3 days. For longer storage, keep them refrigerated for up to two weeks in an airtight container, or freeze for up to two months. When frozen, thaw in the refrigerator before serving.

Can I double the recipe?

Yes. This recipe scales easily — double, triple, or more. Because brigadeiros freeze well, making a larger batch is convenient for preparing treats in advance.

  4. Pour onto a greased plate or shallow bowl and refrigerate for about one hour, until firm enough to scoop.
  5. Grease your hands and a tablespoon measure. Scoop and roll roughly tablespoon-sized portions into smooth balls.
  6. Roll each ball in your chosen coating and place in miniature cupcake liners. Store chilled or freeze for longer keeping.

Notes

Sifting out raspberry seeds is optional but results in a silkier brigadeiro. Store refrigerated for up to two weeks or frozen up to two months. Thaw frozen brigadeiros in the fridge before serving.
