Ingredients

Peaches

  • 4 fresh peaches
  • 2 Tablespoons vegetable oil

Crumble

  • 1/4 cup rolled oats
  • 2 1/4 teaspoons all-purpose flour
  • 1/8 cup firmly packed brown sugar
  • 3/16 tsp ground nutmeg
  • 1 1/2 Tablespoons salted butter
  • 4 teaspoons sliced almonds

Topping

  • 2 cups vanilla ice cream
  • 2 Tablespoons honey

Instructions

Crumble

  1. Heat oven to 350°F (175°C).
  2. Line a small sheet pan with parchment and set aside.
  3. In a small bowl, combine oats, flour, brown sugar, and nutmeg.
  4. Cut in butter with a pastry blender or fork until crumbly.
  5. Stir in sliced almonds and spread the mixture on the prepared pan.
  6. Bake 10–12 minutes, until golden and bubbly.
  7. Allow to cool slightly, then break apart into crumble pieces.

Peaches

  1. Halve the peaches and remove the pits.
  2. Brush a grill pan with vegetable oil and heat over medium-high heat.
  3. Lightly brush the cut sides of the peaches with oil just before placing on the pan.
  4. Place peaches cut-side down and grill 3 minutes, until char marks appear.
  5. Flip and cook another 3 minutes, or until the peaches are tender but still hold their shape.

Assembly

  1. Drizzle each peach half with honey.
