They use a handful of wholesome pantry staples, and once you get the hang of it you can swap nuts and dried fruit to create new flavour combinations.

What ingredients do you need?

- Medjool dates – naturally sweet and sticky, they bind the bars and add a caramel-like depth.

This recipe is a great way to use up any leftover dried cranberries from holidays or baking projects. The dates act as the glue — they break down in the food processor to form a sticky, cohesive mixture while adding moisture and sweetness. There are slightly more dates than cranberries so the texture stays chewy and the cranberries provide the bright, tart note on top.
How to make these Raw Cranberry Bars
- Prepare a square baking tin (about 5 x 5 x 3 inches). Line it with parchment paper so the paper hangs over the sides for easy removal, and lightly grease the tin if desired.
- Place medjool dates, dried cranberries, macadamia nuts and blanched almonds into a food processor. Add the optional freeze-dried raspberry powder if using.
- Process the mixture for 3–5 minutes, stopping to scrape the sides, until everything breaks down and the mixture forms a sticky ball that clumps together when pressed.
- Transfer the mixture into the lined tin and press down firmly and evenly with the back of a spoon or with parchment to compact it.
- Chill in the refrigerator for a couple of hours to firm up. Use the overhanging parchment to lift the block out of the tin, then cut into approximately 12 bars.
Top tip: Lining the tin with overlapping parchment makes it far easier to remove the set mixture and cleanly slice bars. Pressing the mixture firmly ensures the bars hold together and slice neatly.

How to store
Store the bars in an airtight container in the refrigerator for up to one week. For longer storage, freeze the bars in a single layer until firm, then stack with parchment between layers in a freezer-safe container. Defrost individual bars at room temperature for a few minutes before eating.

Raw Cranberry Energy Bars (Homemade Nakd Bars)
Ingredients
- 180 g medjool dates, pitted
- 75 g dried cranberries
- 75 g macadamia nuts
- 50 g blanched almonds
- 1 tablespoon freeze-dried raspberry powder (optional)
Instructions
- Line and grease a square baking tin with overlapping parchment.
- Combine all ingredients in a food processor and blend until they form a sticky, cohesive ball (about 3–5 minutes).
- Tip the mixture into the prepared tin and press it down evenly.
- Refrigerate for a couple of hours to firm up, then lift from the tin and cut into 12 bars.
- Store chilled in an airtight container for up to one week, or freeze for longer storage.
Notes
The recipe was tested using metric measurements; for the most reliable results weigh ingredients with a digital scale. If macadamias are expensive or difficult to find, you can substitute cashews for a similar texture. The raspberry powder is optional but brightens both colour and taste.
