About This Leeky Chicken Pizza Recipe
While visiting Vermont, I learned about Folino’s “Leeky Chicken” pizza and loved the idea of recreating a gluten-free version at home. I used a reliable frozen gluten-free crust and adapted the toppings to match the original: olive oil base, three-cheese blend, buffalo chicken, leeks, bacon, and a drizzle of ranch.
Ingredients You Will Need
The Leeky Chicken is made with: olive oil base, three-cheese blend, buffalo chicken, leeks, bacon, ranch.
- Olive oil
- Cheese (I prefer Colby or Monterey Jack, or a blend)
- Buffalo chicken (pre-cooked chicken breast tossed with a gluten-free buffalo sauce)
- Leeks, cleaned and sliced thin
- Cooked bacon, chopped
- Ranch dressing (verify gluten-free)
- One gluten-free pizza crust
Gluten-Free Pizza Crust
Use a gluten-free crust you trust. I often use local frozen crusts, but store-bought options like Trader Joe’s gluten-free dough or Schar work well. For a homemade route, try a reliable gluten-free pizza dough recipe. Follow package directions for baking temperatures and times.
How To Make Leeky Chicken Pizza
Prepare the crust according to package instructions and preheat your oven. Brush the crust lightly with olive oil, then add a layer of shredded cheese. Distribute the sliced leeks, buffalo-seasoned chicken, and chopped bacon evenly over the cheese. Bake until the crust is golden and the cheese is melted. Finish by drizzling ranch over the hot pizza before slicing.
The buffalo adds heat, the ranch brings creaminess, the cheese and leeks add savory depth — and bacon makes it irresistible.
