The Best Chocolate Chip Cookies Ever, Period (and Gluten-Free!)

MAKES 20 COOKIES. These gluten-free chocolate chip cookies are rich, tender, and satisfyingly chewy — easily the best you’ll make at home. This recipe is adapted from Lisa Lan of San Francisco’s Bumblebee Bakeshop. Using high-quality chocolate and a good gluten-free flour blend makes a big difference. Be prepared: once you try them, you’ll be hard-pressed to go back to ordinary cookies.

Ingredients

    cup
    dark brown sugar
  • 1/2
    cup
    granulated sugar
  • 2
    teaspoons
    molasses
  • 1
    teaspoon
    gluten-free vanilla paste or vanilla extract
  • 3/4
    cup
    unsalted butter,
    at room temperature
  • 1
    egg,
    at room temperature
  • 2
    cups
    gluten-free flour blend
  • 1
    teaspoon
    kosher salt
  • 1/2
    teaspoon
    baking soda
  • 3/4
    cup
    semisweet chocolate chips or chunks
  • 2/3
    cups
    bittersweet chocolate chips or chunks

Instructions

  1. Preheat the oven to 325°F (165°C). In a large bowl, beat the dark brown sugar, granulated sugar, molasses, vanilla, and softened butter until well combined. Add the egg and continue mixing until the batter is smooth and glossy.
  2. Sift or whisk together the gluten-free flour blend, kosher salt, and baking soda. Add the dry ingredients to the wet mixture and stir just until incorporated — avoid overmixing to keep the cookies tender. Gently fold in both types of chocolate until evenly distributed.
  3. Line a baking sheet with parchment paper. Using about 2 tablespoons of dough per cookie, roll the dough into balls and place them on the prepared sheet at least 2 inches apart. Bake for about 15 minutes, or until the edges are golden while the centers remain soft. Allow cookies to cool on the pan before transferring to a wire rack. Repeat with any remaining dough.
