Garlic Butter Chicken Thighs with Potatoes are juicy, flavorful, and easy to make. Tender chicken thighs, rich butter, garlic, and Parmesan create a satisfying weeknight dinner that pairs well with a simple salad or steamed vegetables.

Ingredients for Garlic Butter Chicken Thighs
Chicken thighs are an underrated choice for everyday meals. They have slightly more fat than breasts, which keeps them juicy and flavorful during cooking. They work especially well in a slow cooker, where they stay tender and absorb seasoning.
- small to medium-sized potatoes (baby potatoes or small red/golden potatoes), cut into bite-sized pieces
- 2 tbsp minced garlic
- 1 tsp onion powder (divided)
- 1 tsp garlic powder (divided)
- 1 tsp paprika (divided)
- 1 tsp Italian seasoning (divided)
- 1 tsp salt (divided)
- ½ tsp pepper (divided)
- 1 lb boneless skinless chicken thighs
- ¼ cup butter, sliced into small pieces
- ¼ cup Parmesan cheese

How to Make Garlic Butter Chicken Thighs
This recipe is perfect for busy days—everything goes into the slow cooker, and the machine does the rest. Start mid-morning or at lunchtime so dinner is ready when you need it.
Spray a large slow cooker with non-stick spray or use a slow cooker liner. Add the potatoes, minced garlic, and half of the seasonings (onion powder, garlic powder, paprika, Italian seasoning, salt, and pepper). Stir to coat the potatoes evenly. Arrange the chicken thighs on top of the potatoes and season the tops with the remaining seasonings.
Dot the chicken with slices of butter and cover the slow cooker. Cook on LOW for 6 hours or on HIGH for 4–5 hours, until the chicken reaches an internal temperature of 165°F and is cooked through. Stir in the Parmesan cheese just before serving to add a savory finish.
Serve with a simple salad, steamed vegetables, or warm dinner rolls for a complete meal.
