These Whole30 Garlic Fries are our family’s favorite crispy fries. They can be baked in the oven or cooked in an air fryer, and they are naturally gluten-free, dairy-free, nut-free, and egg-free. The recipe uses just five simple ingredients and produces fries with a restaurant-quality crunch and bold garlic flavor. Once you try them, you’ll likely want to make them again and again.

These fries are easy to customize and scale for a family meal. They pair well with simple Whole30-friendly sauces and protein dishes, turning a weeknight dinner into something more memorable without much extra effort.

Why Soak the Fries?

Soaking the cut potatoes in cold water is an extra step that really pays off. The soak removes excess surface starch, which helps the fries crisp instead of becoming limp. Thirty minutes is sufficient, but soaking overnight gives even better results. After soaking, drying the fries thoroughly is crucial—use two towels or a salad spinner to remove moisture so the oil can crisp the exterior. Ingredients

  • 2.5 pounds russet potatoes
  • 2/3 cup olive oil or garlic olive oil, divided
  • 1 tablespoon garlic powder (or granulated garlic)
  • 1 tablespoon garlic salt (or to taste)
  • 1–2 tablespoons fresh minced garlic

Instructions

  1. Cut the potatoes into even fry strips. Place the cut fries in a large bowl of cold water as you work. Rinse them in a colander before soaking.
  2. Refill the bowl with cold water and refrigerate for at least 30 minutes. This step reduces surface starch and helps the fries crisp.
  3. If using the oven, preheat to 375°F and line a baking sheet with parchment paper.
  4. Drain and dry the fries thoroughly between two towels or in a salad spinner. Toss the dried fries with 1/3 cup olive oil, then add garlic powder and garlic salt, tossing to coat evenly.
  5. Spread the fries in a single layer on the parchment-lined sheet or arrange them in the air fryer basket.
  6. Oven method: cook at 375°F for 20 minutes, stir, then increase heat to 425°F and bake for about 30 minutes more, or until crispy and golden. Air fryer method: cook at 350°F for 15 minutes, shake or stir, then finish at 400°F for 10 minutes or until crisp.
  7. While the fries finish, warm the remaining 1/4 cup oil with 1–2 tablespoons minced garlic in a small saucepan over medium heat for 3–4 minutes to infuse the oil. Do not let the garlic brown.
  8. Toss the finished fries with the garlic-infused oil. Garnish with chopped fresh parsley if desired and serve immediately.
