Butterscotch Toffee Chocolate Chip Cookies Recipe

These cookies are every bit as delicious as they look. I made a batch a couple of weeks ago and could easily eat a dozen right now. They’d be perfect to help soothe the scratchy throat and cough I’ve been fighting — I’m finally feeling well enough to sit at the computer and share them. The combination of chocolate, toffee and butterscotch gives each bite a comforting, nostalgic sweetness that’s hard to resist.

Chips and bits — a generous mix of chocolate, toffee and butterscotch pieces make these cookies delightfully textured and full-flavored. They’re perfect for sharing, but you might find it hard not to keep most of them for yourself.

The dough alone is tempting enough to scoop by the spoonful. It’s soft and studded with all those tasty mix-ins, so if you plan to sample, try to reserve enough to bake a full batch.

Don’t get too carried away tasting — you’ll want to save plenty of dough so the oven can work its magic and give you warm, melty cookies.

Ingredients

  • 2-1/4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1-1/2 cups chocolate chips
  • 1 cup toffee bits
  • 1 cup butterscotch chips

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Whisk together the flour, baking soda and salt in a medium bowl. Set aside.
  3. Beat the butter and both sugars in a mixer for several minutes until light and fluffy.
  4. Add the eggs and vanilla, and mix until incorporated.
  5. Mix in the flour mixture on low speed until just combined. Stir in the chocolate chips, toffee bits and butterscotch chips.
  6. Drop spoonfuls of dough onto a baking sheet about 2 inches apart.
  7. Bake for 9–12 minutes, until the edges are set and the centers are still soft. Allow to cool slightly on the sheet before transferring to a rack.
