
Ready for my latest obsession? This Marinated Tomato Salad with Feta is simple to prepare, light, and full of bright summer flavor. It’s perfect as a lunch, a side at a barbecue, or a way to use fresh tomatoes from the garden.
At the restaurant where I work, we started serving marinated tomatoes alongside burrata. One day I ate the tomatoes on their own, added feta and pepperoncini, and the next day I topped them with grilled chicken for a heartier meal. I recreated that combination at home and now it’s a favorite—refreshing, tangy, and easy to pull together.

Full disclosure: I’m not usually a fan of raw tomatoes, but these marinated tomatoes won me over. The vinegar, oil, and seasonings soften and deepen the tomato flavor, and the feta adds a creamy, salty contrast. They’re especially good during pregnancy when I crave brighter, healthier dishes, but anyone will enjoy this simple salad.

- Roma tomatoes
- Garlic
- Shallot (or sweet onion)
- Red wine vinegar
- Italian dressing
- Italian seasoning or fresh basil
- Feta cheese
- Pepperoncini
- Salt & pepper
- Serrated knife for easy cutting (optional)

How to make these delicious Marinated Tomatoes
Start by chopping the Roma tomatoes. A serrated knife makes this easier but any sharp knife works. Finely dice the shallot (or sweet onion) and mince the garlic.


Combine the tomatoes, shallots, garlic, olive oil, Italian seasoning (or fresh herbs), red wine vinegar, and Italian dressing in a medium bowl. Stir well so the tomatoes are evenly coated in the dressing and vinegar.


Top the marinated tomatoes with crumbled feta and chopped pepperoncini. If you plan to store the salad overnight or for several days, consider adding the feta and pepperoncini just before serving to keep them from becoming too soggy. Refrigerate for a few hours to let the flavors meld—overnight is best.

What are shallots?
Shallots are small members of the onion family with a milder, slightly sweeter flavor than common onions. They work well in dressings and salads when you want a softer onion note. You’ll find them in the produce section near other onions and peppers.
What to serve with this Marinated Tomato Salad with Feta?
This salad is excellent on its own or served over a bed of spring mix. It pairs beautifully with grilled seafood like shrimp, grilled chicken, or as a bright side when serving smoked brisket. It also makes a lovely accompaniment to sandwiches and grilled meats at summer gatherings.

Marinated Tomato Salad with Feta

Ingredients
- 6 Roma Tomatoes chopped
- 1/4 cup finely diced shallots or sweet onion
- 1 clove of garlic minced
- 1 tbsp olive oil
- salt and pepper to taste
- 2-3 tbsp Italian Dressing
- Italian Seasoning or fresh herbs/basil
- 1/4 cup red wine vinegar
- 5 pepperoncini’s chopped
- 1/4 -1/2 cup crumbled feta cheese
Method

In a medium bowl add the tomatoes, shallots, and garlic.

Sprinkle with some salt, pepper, and Italian seasoning.

Stir the ingredients and drizzle with olive oil, Italian dressing, and red wine vinegar.

Stir until all ingredients are covered in liquids.

Add the pepperoncini and feta and on top.

Refrigerate for at least a few hours until ready to serve.
Notes
*For better presentation and less sogginess, add the pepperoncini and feta just before serving if storing for a while.
*Yields about 6–8 servings as a side or 2–3 servings as a main dish.
