Buffalo Chicken Breast Burgers with Tangy Blue Cheese Slaw

These Buffalo chicken breast burgers are no ordinary sandwich. Tender, juicy, and spicy, they’re full of bold flavor and perfect topped with cooling ranch or blue cheese dressing. Whether it’s Game Day or a backyard barbecue, they make a memorable meal.

I love finding new ways to use Buffalo wing sauce, and when I couldn’t decide between burgers or wings for a party, I combined them into these chicken breast burgers. Instead of ground chicken, I prefer to use whole chicken breasts for a juicier, meatier bite — no pink slimy texture here, just a satisfying chicken burger that stands up to big flavors.

How to make Buffalo Chicken Breast Burgers

Begin by pounding the thicker parts of the chicken breasts with a meat mallet or a heavy rolling pin to even out their thickness. That helps them cook evenly and prevents drying out. Season both sides with salt and pepper, then lightly dredge the breasts in flour and shake off the excess. The flour creates a light crust that helps the sauce cling during baking.

Make a simple Buffalo wing sauce by whisking together hot sauce and melted butter, or use a prepared Buffalo wing sauce if you prefer. I usually reach for a classic cayenne pepper hot sauce such as Frank’s RedHot. Heat a tablespoon of olive oil in a large oven-safe skillet over medium-high heat, and sear the chicken breasts for about two minutes per side until golden brown.

Pour the Buffalo sauce over the seared chicken and transfer the pan to a 400°F (200°C) oven until the breasts are just cooked through, about 20–25 minutes. If your skillet isn’t oven-safe, move the chicken to a baking dish before adding the sauce. Once the chicken reaches the proper temperature, top each breast with a slice of provolone or mozzarella and return to the oven for a minute or two to melt.

Assemble your burgers on toasted buns and add ranch or blue cheese to cool the heat. Optional toppings like lettuce, tomato, or thinly sliced red onion add freshness and crunch. These burgers register around medium on the spicy scale but very high on the delicious scale.

Ingredients

  • 4 small skinless boneless chicken breasts
  • salt and pepper to taste
  • 1/2 cup all-purpose flour
  • 1 tablespoon olive oil
  • 1/2 cup cayenne pepper hot sauce such as Frank’s RedHot
  • 1 tablespoon butter melted
  • 4 burger buns
  • ranch or blue cheese to taste
  • 4 slices provolone or mozzarella
  • optional toppings: lettuce, tomato, red onion

Instructions

  • Preheat the oven to 400°F (200°C). Pound the chicken breasts slightly to even their thickness.
  • Heat the olive oil in a large oven-safe skillet (cast iron is ideal) over medium-high heat.
  • Place the flour on a plate. Season the chicken with salt and pepper and dredge in the flour, shaking off excess.
  • Sear the chicken in the hot pan about 2 minutes per side until golden brown.
  • While searing, whisk together the hot sauce and melted butter. Pour the sauce over the chicken and transfer the pan to the oven. If your pan isn’t oven-safe, move the chicken to a baking dish first.
  • Bake for 20–25 minutes until just cooked through. Add cheese slices and return to the oven until melted, 1–2 minutes.
  • Assemble each burger with a chicken breast, ranch or blue cheese, and any optional toppings you like.

Notes

After pounding the breasts, you can trim the little chicken tenders and shape them to fit the buns if you prefer; the trimmings freeze well for soups or other recipes.
