Moist Banana Chocolate Chip Muffins

Baking is one of my favorite pastimes. I love making treats for my family, and cookies are my top pick. Close behind are muffins—especially when I have ripe bananas on hand. Recently I tried a Banana Chocolate Chip Muffin recipe that cuts back on butter and uses egg whites, and it turned out to be a hit with everyone.

The recipe is straightforward and uses simple pantry staples. You’ll combine flour, baking powder, cinnamon, and salt as the dry base. I always add cinnamon to banana-based baking because it complements the fruit and brings a warm aroma to the kitchen. Once the dry ingredients are ready, preheat the oven and prepare your muffin tin with liners.

In the wet bowl, cream a small amount of softened butter with brown sugar, then beat in egg whites one at a time, adding vanilla at the end. Fold the dry ingredients into the wet mixture, alternating with mashed ripe bananas and starting and finishing with the flour mixture. Finally, stir in mini chocolate chips for a chocolatey pop throughout the muffins—mini chips distribute a little burst of chocolate in each bite, but regular chips work just fine too.

Portion the batter into lined muffin cups, filling each about halfway. Sprinkle a few extra mini chocolate chips on top for a pretty finish and a melty top while baking. The muffins bake quickly—about 17 to 20 minutes—and are best cooled briefly in the pan before transferring to a wire rack. Serve warm with a glass of juice, coffee, or a smoothie for a balanced breakfast or satisfying snack.

Ingredients

  • 1 1/3 cup all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons butter or margarine, softened
  • 3/4 cup brown sugar
  • 2 egg whites, room temperature
  • 1 teaspoon vanilla extract
  • 2 ripe bananas, mashed
  • 1/4 cup mini chocolate chips, plus 1 tablespoon to sprinkle on top

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter and brown sugar until combined. Add the egg whites one at a time, beating after each addition, then stir in the vanilla.
  4. Fold in the flour mixture, alternating with the mashed bananas. Begin and end with the flour mixture, mixing until just combined. Avoid overmixing.
  5. Stir in 1/4 cup mini chocolate chips. Divide batter evenly among the lined muffin cups, filling each about halfway. Sprinkle the remaining tablespoon of mini chocolate chips on top of each muffin.
  6. Bake at 350°F for 17–20 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Let the muffins rest in the pan for five minutes, then transfer to a wire rack to cool completely.

  • If you prefer a richer muffin, replace the two tablespoons of butter with an equal amount of softened coconut oil or add a tablespoon of Greek yogurt to the batter for extra moisture.
