Classic Rock Shandy Recipe: Refreshing Lemon Beer Cocktail Guide

Rock shandy is a classic South African refresher made with equal parts fizzy lemonade and soda water, brightened with a few dashes of aromatic bitters and finished with ice and lemon. The result is citrusy, lightly bitter and effervescent — ideal for hot days, backyard braais and relaxed summer entertaining.

Many people treat rock shandy as a non-alcoholic or very low-alcohol drink. Traditional Angostura bitters do contain alcohol, but only a few dashes are used so the finished glass holds only trace amounts. If you need a fully alcohol-free version, see the alcohol-free notes in the recipe.

What is a Rock Shandy?

In South Africa, a Rock Shandy is hand-built in a tall glass from clear, fizzy lemonade and soda water with a few dashes of aromatic bitters, ice and a lemon garnish. You’ll see it on many menus as a cooling, non-fussy drink for hot weather, lunches and braais.

This recipe refers to the South African, hand-mixed rock shandy, not the bottled Irish “Club Rock Shandy.”

Why this Rock Shandy works

  1. Straightforward ingredients — just fizzy lemonade, soda water and aromatic bitters.
  2. Ready in minutes — build it in the glass over ice.
  3. Balanced, not cloying — soda water tones down sweetness while bitters add complexity.
  4. Easy to scale — keep equal parts lemonade and soda water and adjust bitters to taste.
  5. Perfect for summer — light, fizzy and refreshing for outdoor gatherings.

Key ingredients

The full ingredient list with measurements is in the recipe card below.

Rock shandy ingredients.

Lemonade

Use clear, fizzy lemonade such as Sprite, 7UP or a Schweppes-style lemon-lime soda. In places where still homemade lemonade is common, make sure you choose a carbonated lemon-lime drink for the authentic flavour and fizz. A sugar-free lemon-lime soda is fine if you prefer fewer calories.

Soda water

Plain soda water lightens the lemonade and prevents the drink from being overly sweet. Use chilled soda water for the best fizz.

Aromatic bitters

Angostura bitters are traditional and give rock shandy its distinctive amber tint and herbal bitterness. Because only a few dashes are used, the alcohol contribution is minimal. Swap in alcohol-free bitters when you need a truly alcohol-free drink.

Ice and lemon

Serve very cold with plenty of ice. Finish with a lemon slice, wedge or twist for a bright visual and aromatic lift.

How to make a Rock Shandy

A glass of ice.

1. Fill a tall glass with plenty of ice.

Adding soda water to the glass.

2. Pour equal parts soda water and fizzy lemonade over the ice.

Adding Angostura bitters to the rock shandy.

3. Add 5–10 dashes of Angostura bitters, or adjust to taste.

Giving the rock shandy a stir with a spoon.

4. Stir gently to combine. Stir less if you want a layered ombré look; stir more for an even flavour throughout.

5. Garnish with a lemon slice, wedge or twist and serve immediately while fizzy.

How to make a lemon twist

Peeling a long length of lemon peel with a peeler.

1. Use a vegetable peeler to remove a long strip of lemon peel, avoiding as much white pith as possible.

Slicing a long strip of lemon peel for the lemon peel twisty to go on the rock shandy glass.

2. Trim the strip into a thin twist.

3. Coil it around your finger, a straw or the handle of a spoon to shape the twist.

4. Hook the twist over the rim of the glass for an easy, elegant garnish.

Is Rock Shandy non-alcoholic?

Rock shandy is commonly considered non-alcoholic because only a few dashes of bitters are used. Traditional aromatic bitters contain alcohol, but the amount in a single glass is negligible. For a completely alcohol-free drink, substitute alcohol-free bitters.

Variations

  • Sugar-free — use a sugar-free lemon-lime soda.
  • Ginger twist — replace some or all soda water with ginger ale or ginger beer for spice.
  • Less sweet — increase the soda water to lemonade ratio.
  • More bitter — add extra dashes of bitters for a stronger herbal note.
  • Alcohol-free — use alcohol-free aromatic bitters.
  • Cocktail version — add a shot of vodka, gin or white rum. Vodka keeps the flavour neutral; gin adds botanical complexity.

How to make a jug of Rock Shandy

Keep equal parts lemonade and soda water and scale up. Add bitters to taste and serve immediately so the mixture stays sparkling.

For a 1-litre jug, use:

  • 500ml fizzy lemonade
  • 500ml soda water
  • 20–30 dashes Angostura bitters, or to taste
  • plenty of ice
  • lemon slices to garnish

Stir gently and serve straight away.

Troubleshooting Rock Shandy

Too sweet

Increase the soda water ratio or add extra ice to dilute sweetness.

Too bitter

Reduce the dashes of bitters or add a touch more lemonade.

Flat drink

Make the drink just before serving and use well-chilled fizzy lemonade and soda water.

Bitters sink to the bottom

Give the drink a gentle stir. Stir less for a layered look or stir fully for an even flavour.

Doesn’t taste like the South African version

Ensure you’re using clear, carbonated lemonade and plain soda water rather than still lemonade.
