Ingredients
- 1 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1 large egg
Instructions
- Preheat the oven to 325°F (160°C).
- In a medium bowl, stir together the peanut butter, sugar and egg until just combined.
- Form the dough into 2-tablespoon sized balls (or use a cookie scoop) and place them about 2 inches apart on a baking sheet.
- Press each ball down with a fork to create a crosshatch pattern.
- Bake 12–14 minutes, until the cookies are set and no longer shiny and the edges are just beginning to brown. Avoid overbaking to keep them soft and chewy.
- Let the cookies cool on the baking sheet for about 10 minutes before transferring to a wire rack—they will be very soft initially.
